Walnut Roca Bars

When looking for still life subjects to photograph, food is not usually my 'go to'. But when I'm not inspired by anything else, food works! This recipe for Walnut Roca Bars is a family favorite, and is a modification of my friend, Marci's, Almond Roca Bars. It's simple and quick. There is nothing really healthy about it except perhaps the nuts. But these bars are sooooo yummy!When my kids were little, they were enrolled in a cooperative nursery school in which all parents worked to enable the school to function. As with most cooperatives, we needed to generate a little money for some maintenance improvements on the facility. It was decided to create a cookbook in which each member contributed favorite recipes. This is my version of the one that Marci had contributed. I use walnuts for the additional nuts on top. (Of course!) I think another thing that makes them special is that I use a very loved pan that belonged to my grandmother in which to bake them. So, here is my version of  

Walnut Roca Bars

Ingredients

Walnut Roca Bars

1 cup softened butter1 cup brown sugar1 egg yolk1 cup flour (Do not use a heaping cupful as I have photographed. Use a level 1 cup.)1 six ounce pkg Hershey milk chocolate bars (with almonds)3/4 to 1 cup nutsCream butter and sugar. Beat in egg yolk. Add flour and stir until smooth. Spread onto a well-greased 11 x 7 inch baking dish. Bake at 350* for 15 - 20 or longer. Remove from oven and lay chocolate bars on top to melt. Spread and sprinkle with nuts. Lightly press into the chocolate. Cool completely and cut into bars. Enjoy!
